BBQ Recipe 3 – Jamaican Barbecue Chicken

We’re bringing some Caribbean flavour to the BBQ Week with this finger licking recipe.

Prep: 10 minutes  |  Marinating: 8 hours | Cooking: 30 minutes

  • 1 spring onion, finely chopped
  • 4 tablespoons orange juice (freshly squeezed preferably)
  • 1 tablespoon finely grated fresh ginger
  • 1 tablespoon finely chopped green chilli
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 clove garlic, crushed
  • 1 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 whole chicken, cut into pieces


  1. Combine spring onions, orange juice, ginger, chilli, lime juice, soy sauce, garlic, allspice, cinnamon and cloves.
  2. Add the mix to the chicken in a large bowl and marinate for at least 8 hours (the longer the better!)
  3. Preheat barbecue for medium heat and cook the chicken until juices run clear.
  4. Reduce the leftover marinade for 2-3 minutes and drizzle over the chicken.
  5. Serve with rice, sweet potatoes or a colourful leafy salad.

If you like your chicken strongly flavoured, double the ginger and chilli measurements.

This is an easy and tasty dish, just prepare the night before, leave it marinating and it is ready for an after-work BBQ.
