BBQ Recipe 2 – Pork Sausages with Cabbage and Apple Slaw

INGREDIENTS

  • 1/4 small Savoy or green cabbage, finely shredded
  • 3 spring onions, finely sliced
  • 1 pink lady apple, cut into julienne strips
  • 1/2 cup coleslaw
  • 1/2 cup coriander leaves
  • 6 thick pork sausages
  • 6 long rolls or hot dog rolls, split

 

PREPARATION METHOD: 
 
  1. Mix the cabbage, spring onions and apple in a large bowl. Toss the dressing through the coleslaw to combine. Chill for 1 hour. Toss through coriander leaves
  2. BBQ or grill the sausages over medium-low heat, turning occasionally until cooked through. Cool slightly. Grill the buns cut-side down until toasted
  3. Place the sausages in bread topped with coleslaw. Serve immediately

This is a great alternative for a quick lunch. The tangy taste of the apple gives the topping a great twist.
